Q: Do I need a bread machine?
A: Nope, you don't need a bread machine. The guy in the video doesn't use one. For me it's just a convenient place for the pre-ferment to rise, and later, the dough to rise, and it does all the mixing so it saves me a little mess and counter space. My goal is to make sourdough bread making really easy, so if I can have a machine do most of the work for me, it's good. Also the bread machine has a heater during proofing which is good (but not necessary.)
