Yeast Rolls - Various
This makes 1 pound of dough so realistically a dozen rolls; you can double it.
Bread Machine: Add the warm milk, butter, salt & sugar and yeast, give it a swirl, put the flour on top and let it sit for 10 minutes before starting the cycle.
The 425 for 20 minutes is excessive - do 375 and check them at the 15 minute point.
Shaping
- Fan tans
- grease muffin tins. Roll out into a 13x9 rectangle. Brush lightly with melted butter. Cut into 2" wide strips and stack up; cut the stack into 12 cubes and put into the muffin tins with the edge you just cut, down.
- Pan rolls
- divide dough into 12, knead each chunk a couple times to make a smooth ball, place in a greased 8 x 8 x 2 pan.
- Dinner rolls
- cut into 12, shape into ovals, place 2" apart on greased baking sheet. Brush with egg wash & sprinkle with poppy seeds.
- Crusty rolls
- as above, cut a slash with a very sharp knife in the top of each one, dust lightly with flour.
- Parker House Rolls
- Roll out ¼" thick, cut with 2 ½" cutter, brush tops with melted butter, fold over.
- Crescent rolls
- Roll into a 16" circle, cut like a pie, roll up.
- Knots
- divide into 12, roll each into a snake, tie the snake into a knot.
- Cloverleaf
- divide into 12, divide each of those into 3, put 3 in each greased muffin cup, brush with melted butter
