Thai Ginger Peanut Chicken by Moose

Ingredients

an entire bulbgarlic
a fist sized piece at leastginger
two, 650mL jarssalsa: mild, smooth or chunky, any brand
3 tbllime juice
2 tblsoy sauce
⅓ cuppeanut butter
4-5 depending on sizechicken breasts

Bust Out

slow cooker

Steps

  1. Mince garlic, peel & mince ginger into the slow cooker
  2. Add salsa: mild, smooth or chunky, any brand, lime juice, soy sauce and peanut butter
  3. Stir a little to break up the PB.
  4. Add chicken breasts
  5. Cook for 7-8 hours on low, less on high.
  6. Shred chicken with 2 forks and serve.
