Thai Ginger Peanut Chicken by Moose

Ingredients
an entire bulb | garlic |
a fist sized piece at least | ginger |
two, 650mL jars | salsa: mild, smooth or chunky, any brand |
3 tbl | lime juice |
2 tbl | soy sauce |
⅓ cup | peanut butter |
4-5 depending on size | chicken breasts |
Bust Out
slow cooker |
Steps
- Mince garlic, peel & mince ginger into the slow cooker
- Add salsa: mild, smooth or chunky, any brand, lime juice, soy sauce and peanut butter
- Stir a little to break up the PB.
- Add chicken breasts
- Cook for 7-8 hours on low, less on high.
- Shred chicken with 2 forks and serve.
