Ingredients

20 gbread flour
27 gwater
60 gwhole milk
9 gyeast
120 gwhole milk
320 gbread flour
3 gsalt
56 gsugar
1 wholeegg
42 gunsalted butter

Steps

  1. Mix the bread flour, water , whole milk for the tangzhong.
  2. Cook together constantly mixing until sticky and tacky. 2 mins.
  3. As soon as very thick allow to cool to room temp.
  4. Add yeast to 90-95F whole milk.
  5. Mix and sit for 10 mins.
  6. Wisk bread flour, salt , and sugar in mixer bowl.
  7. Put dough hook in. Add tengzhong, milk and yeast, and egg.
  8. Start at low and scrape sides as needed. As soon as it comes together turn to medium speed.
  9. Keep on med-low, gradually adding in unsalted butter , ⅓ at a time. Mix until incorporated.
