Gee's Spiced Rum Banana Jam

Serve with vanilla ice cream. Or mix with plain yogurt. Or eat it out of the jar with a spoon. You do you.

Ingredients

 3cwhite sugar
1 cmolasses
1 cwater
⅓c, 2-3 real limeslime juice
10borderline-rotten bananas
1 tspcinnamon
½ tspginger
¼ tspallspice
⅛ tspcloves
¾ crum
2 tspvanilla extract
1 pkgliquid pectin

6 x 250mLjars
stock pot
candy thermometer

Steps

  1. Sterilize jars. Use a stock pot with an inch of water in the bottom at a simmer, just lay the mason jars in there on their side. When it's time to use them, fish out with tongs.
  2. Combine white sugar, molasses, water and lime juice
  3. boil to 220F on the candy thermometer
  4. Coarsley mash borderline-rotten bananas
  5. add cinnamon ½ tsp, ginger, allspice cloves and bananas,
  6. simmer slowly to 220F, stirring every minute or so. This will take a long time as the bananas release water and cook down.
  7. add ½ cup of the rum and vanilla extract, cook to 220F again
  8. remove from heat, add remaining ¼c rum, then add liquid pectin.
  9. Let cool for a couple minutes, then transfer to jars.
