Pancakes - 250g Sourdough

Two unusual things: the baking soda gets whisked into the liquid ingredients, and everything should be as cold as possible so that all the rising happens in the squillet.

Ingredients

2 tblbutter
2 tblsugar/sweetener
¼ ccornmeal
1egg
⅛ tspbaking powder
2 tblmilk
½ tspvanilla
the starter

Bust Out

skillet
Whisk
small bowl
medium size bowl
¼ cup ladle

Steps

  1. Start melting butter and warming up the skillet to medium-hot.
  2. Whisk sugar/sweetener and cornmeal in a small bowl
  3. In a medium size bowl, whisk egg until foamy, then whisk in baking powder, milk, vanilla and butter.
  4. Add dry ingredients, the starter, and whisk just until it's all mixed. Do not over-stir.
  5. Use the ¼ cup ladle for each cake. If the batter is thick the holes won't come through so you will have to peek underneath to check for done-ness.
  6. While the pancakes are cooking, refresh your starter for tomorrow.
