Hungarian Mushroom Soup

For a few weeks there were dozens of copies of this soup recipe posted, all almost identical.

Ingredients

6 tblbutter
2onions
32 ozmushrooms
4 cchicken broth
1 cwine
3 tspdill
3 tsp choppedfresh thyme
4 tsppaprika
4 tbllow sodium soy sauce
2 chalf'n'half or milk
5 tblflour
½ csour cream
4 tbllemon juice
salt
pepper

Steps

  1. Melt the butter, in a large soup pot, add chopped onions and sliced mushrooms and cook until soft, about 15 minutes.
  2. Add the chicken broth, wine, dill, fresh thyme, paprika and low sodium soy sauce. Scrape the browning off the bottom of the pot with the spoon / deglaze. Simmer for about 10 minutes to reduce it a bit.
  3. In a small bowl, whisk the half'n'half or milk and flour until smooth. Whisk the mixture into the soup and cook about 10 minutes.
  4. Reduce the heat and add the sour cream and lemon juice. Season with salt and pepper, to taste.
  5. Heat through.
