Latkes / Potato Pancakes

Ingredients

2, 350gpotatoes
1, 100gonion
vegetable oil
2eggs
¼ cupcrumbs
½ tsppepper
½ tspsalt
3apples
⅛ tspascorbic acid/ vitamin C tablets
sour cream

Bust Out

Cuisinart
frying pan
sieve or colander
medium size mixing bowl

Steps

  1. Wash but do not peel the potatoes, peel the onion.
  2. Put the grater blade in the Cuisinart and grate them, put the knife in and grind up a bit more but leave some texture.
  3. Put the frying pan on medium heat with vegetable oil about ⅛" deep to warm up.
  4. Put the grated potatoes and onion into a sieve or colander and squeeze a bit to drain out excess liquid.
  5. Beat eggs until frothy in a medium size mixing bowl, add potatoes/onion, crumbs, pepper, and salt.
  6. Ladle out into the frying pan and push around to make neat pancake shapes.
  7. Cook over medium heat until deep golden brown - maybe 20 minutes, flip and cook for 15.
  8. While it's cooking, make the applesauce - just puree apples with ascorbic acid/ vitamin C tablets in the cuisinart.
  9. Serve with the applesauce and sour cream.
