Gee's Instant Pot Pho

this is a recipe I got from some random dude I know that works at the CBC, and scaled to fit in an instant pot, and tweaked a bit (notably adding more kaffir because I love that shit). Save bones from roasts etc. I throw in pork bones and beef trimmings and whatever else is available, too.

Ingredients

1steak
3onions
3carrots
3 stickscelery
2 tbspfresh ginger
6whole star anise
6whole cloves
1 tspwhole black pepper
1 tspfennel seeds
1cinnamon stick
3bay leaves
canola oil
3-4 poundsbones
¼ cfish sauce
¼ cbrown sugar or palm sugar
pho noodles
cilantro
1lemongrass stalk
6kaffir lime leafs
bean sprouts
thai basil
hoisin sauce
sriracha

Steps

    top sirloin steak, striploin steak, or some other boneless steak that's not too chewy
  1. Trim your steak into a nice rectangle that you can slice into thin strips, cutting off fatty or sinewy bits on the outside and whatever - save these trimmings.
  2. Chop up onions/carrots/celery/fresh ginger all together in a bowl
  3. Collect pho spices: whole star anise, whole cloves, whole black pepper, fennel seeds, cinnamon stick, bay leaves
  4. Set instant pot to saute high, throw a couple tablespoons of canola oil in there, wait for it to get hot
  5. Sear off the bones & trimmings, whatever in small batches till you get some nice browning. Dump into a bowl.
  6. Deglaze the instant pot with hot water, pour that in with the bones/meat.
  7. Wipe out the instant pot, put in fresh oil, set to saute high again and roast the pho spice. Keep stirring, wait for some snapping/popping to happen and a real good smell.
  8. Add the chopped veg and cook until nicely seared.
  9. Deglaze with more water. Then dump in the bones/water, top up to the max line on the instant pot with hot water from a kettle. Add the fish sauce and brown sugar or palm sugar.
  10. Put the lid on and pressure cook on high 1 hr. Let it cool down for another ½ hour, remove the lid and let it cool some more.
  11. Put a colander over a big stock pot or bowl or something and dump out the instant pot into it, to collect the big chunky bits.
  12. Clean out the instant pot, then dump the stock pot/bowl/whatever back into it through a fine strainer. Bring to a simmer again on saute setting.
  13. Boil your pho noodles, thinly slice your steak, chop up your cilantro, lemongrass stalk, kaffir lime leafs.
  14. Prepare a bowl. Noodles in the bottom, sliced beef over the noodles, pour the hot broth over it (hot broth cooks the beef!) and add bean sprouts, thai basil, hoisin sauce, sriracha to your own taste.
