Hummus / Hummous

This is for garlic lovers if you catch my drift.

I've been using this since the 1980s; I may have gotten it from my Lebanese buddy Paul Awad. It was published on Page 22 of the 2012 Elderberries Cookbook.

Ingredients

1 16oz canchickpeas / garbanzo beans
5 tbllemon juice
1½ tbltahini
½ tspsalt
4 cloves, peeledgarlic
1-2 tblolive oil
parsley

Steps

  1. Drain chickpeas / garbanzo beans reserving the liquid.
  2. Remaining ingredients: lemon juice, tahini, salt.
  3. Finely mince garlic in the food processor
  4. Add chickpeas & remaining ingredients except oil, + ¼ cup of the chickpea can liquid.
  5. Process for a couple of minutes until smooth. Add more can liquid if it's too thick.
  6. Place in serving bowl and make it beautiful! Paul says, "Presentation is everything." Sculpt waves in the surface, create a shallow well in the center, fill it with olive oil and garnish with parsley (optional)
