Traditional vegetable (mostly) meal made with all of the first vegetables of the spring

Optional: cooked crumbled bacon

Ingredients

potatoes
peas
beans
baby carrots
¼ cupbutter
onion
1 cupvegetable stock
1 cupwhipping cream
salt & pepper

Steps

  1. Wash potatoes, peas, beans, baby carrots.
  2. Cook potatoes 10-15 min until tender and save water.
  3. Melt butter and sauté some coarsely chopped onion.
  4. Stir in equal amounts of the vegetable stock and whipping cream.
  5. Add the cooked vegetables, heat through, salt & pepper to taste.
