Fricôt

There are as many fricôt recipes as there are Acadian moms.

Whether it should be served with dumplings or not is a rather hotly contested topic. This one, for now, doesn't include them.

The herbes salées and summer savory are the stars of the show when it comes to flavoring this traditional dish. If you don't have herbes salées, use 1 tsp salt and ¼ c chopped chives or green onions.

1 headcelery
2 lbscarrots
4-5onions
6 medium sizepotatoes
1 tspherbes salées

  6. While the chicken cools, peel and cube the potatoes and add to the pot.
  7. Season the soup with herbes salées, pepper, and summer savory.
  8. Once the chicken has cooled, separate the meat and add it back to the pot.
  9. The potatoes will cook in about 10 minutes.
