Cheese Cake
This is Norval's standard cheesecake; everything in this book is foolproof. I made it 2023-02-14 with a blueberry-mandarin glaze, it was yummy.

Steps
- Preheat oven to 325 (using my convection oven, you run it a little lower.)
- Mix the crust ingredients (I use graham cracker crumbs) in the Cuisinart
- Grease the pan with butter. Put the crumbs in and shake to make it even then press it down with a flat bottomed e.g. lowball glass.
- Dust out the Cuisinart bowl so there are no crumbs
- Use 1 extra egg. Separate the eggs: put the whites in the big mixmaster bowl, put the yolks in the Cuisinart bowl.
- Beat the whites until stiff peaks.
- Add the rest of the ingredients to the Cuisinart bowl and process until totally smooth and pour in with the whites.
- Fold with a rubber scraper until all the egg white chunks lumps disappear, pour into the pan
- Bake for 1:20 at 325
- Let sit in the oven for another half hour.
