Ingredients

1 cupBlack Eyed Peas
6 cupswater
1 tbssalt
1 mediumonion
1green pepper
1tomato
1 cupcoconut milk
pepper
garlic powder
celery
salt
margarine
3 cupsUncle Bens

  1. Soak Black Eyed Peas overnight
  2. Drain and in a large saucepan add cold water, salt, and finely chopped onion.
  3. Cover and cook until peas are soft, then
  4. Add green pepper, tomato, coconut milk, pepper, garlic powder, celery, salt, margarine, more water, and Uncle Bens.
  5. Cover and boil for 5 min.
  6. Turn heat to low until all liquid is absorbed, remove from heat, fluff with a fork and cover.
