Mrs. P's Black Eyed Peas And Rice
"A favourite at The Basketball"

1 cup | Black Eyed Peas |
6 cups | water |
1 tbs | salt |
1 medium | onion |
1 | green pepper |
1 | tomato |
1 cup | coconut milk |
pepper | |
garlic powder | |
celery | |
salt | |
margarine | |
3 cups | Uncle Bens |

Steps
- Soak Black Eyed Peas overnight
- Drain and in a large saucepan add cold water, salt, and finely chopped onion.
- Cover and cook until peas are soft, then
- Add green pepper, tomato, coconut milk, pepper, garlic powder, celery, salt, margarine, more water, and Uncle Bens.
- Cover and boil for 5 min.
- Turn heat to low until all liquid is absorbed, remove from heat, fluff with a fork and cover.
