Marinara Sauce

Makes about 1L, 4 generous servings. Serve over any pasta topped with e.g. grated Parmesan cheese.

Yes, I know it's really a "tomato sauce" not a "marinara sauce."

Ingredients

1 mediumonion
2 tblbutter
4 clovesgarlic
4-6 thin slicesginger root
1carrot
2habaneros
1 tsppepper
1 tspsalt
1 tblchili flakes
28oz canplum tomatoes
3 tspsugar or equivalent
herbs (see pullout)

saucepan or Instant Pot

Steps

  1. Chop onion
  2. Set saucepan or Instant Pot to Sautée and add butter and onion.
  3. Mince garlic while the onion is cooking and add.
  4. Sautée until the onion & garlic are just beginning to turn golden.
  5. Add ginger root and cook for another couple minutes.
  6. Peel & dice carrot and add.
  7. Seed and chop habaneros if you like it hot.
  8. Herbs: 1 tsp oregano or a 2 tbl oregano leafs, chopped; 1 tsp dried basil or 6 large basil leafs, chopped; ½ tsp dried thyme or 2 tbl thyme leafs, chopped.
  9. Add pepper, salt, habaneros, and chili flakes.
  10. Sautee until carrot is soft, about 5 minutes.
  11. Chop plum tomatoes into halves and add, including their liquid.
  12. Add sugar or equivalent.
  13. If using dried herbs (see pullout), add them now; if fresh, add after simmering.
  14. Reduce heat and simmer 10 minutes
  15. Add fresh herbs. Remove from heat.
  16. Remove ginger slices before serving.
