Hollandaise Sauce, Microwave
If sauce separates after microwaveing, add a splash of water and whisk until combined.
Ingredients

2 tbl | lemon juice |
pinch | salt |
2 | egg yolks |

Steps
- Bring butter, lemon juice, salt and cayenne pepper{¼ tsp} just to the boil in the microwave in e.g. a microwave-safe 2-cup measuring cup.
- While it's heating up, beat egg yolks until smooth.
- Slowly drizzle melted butter into the egg yolk mixture while whisking. This exact thing is important.
- Return mixture to the measuring cup. It may set up immediately. If not,
- Microwave for 10 seconds and whisk. Repeat until it firms up.
