Hollandaise Sauce, Microwave

If sauce separates after microwaveing, add a splash of water and whisk until combined.

Ingredients

¼ cbutter
2 tbllemon juice
pinchsalt
2egg yolks

Bust Out

microwave
2-cup measuring cup
whisk

Steps

  1. Bring butter, lemon juice, salt and cayenne pepper{¼ tsp} just to the boil in the microwave in e.g. a microwave-safe 2-cup measuring cup.
  2. While it's heating up, beat egg yolks until smooth.
  3. Slowly drizzle melted butter into the egg yolk mixture while whisking. This exact thing is important.
  4. Return mixture to the measuring cup. It may set up immediately. If not,
  5. Microwave for 10 seconds and whisk. Repeat until it firms up.
