Cabbage Fat-Burning Soup

We made this first in January 2022 and loved it.

May be stored in the fridge for several days, and freezes well, so freeze it in the units that you'll be using it in.

Garnish: some combo of: hot sauce, fresh ground black pepper, celery leafs, sliced green onions, parmesan

Much modified from allrecipes.com "Cabbage Fat Burning Soup" which was itself a presentation of a "Zero Points" Weight Watchers soup from the early 1990s

Ingredients

2 x 1.36L cantomato juice
2 x 796mL canwhole canned tomatoes
1 Lbeef broth
1 1oz envelopeonion soup mix
1 15 oz cangreen beans
1 lg headcabbage
1 head/bunchcelery
5carrots
3onions
2green peppers
1 tblsalt
1 tspblack pepper

  1. Put tomato juice, whole canned tomatoes with liquid, and beef broth in the pot, add onion soup mix, green beans and start it warming up. You'll want it boiling by the time the vegetable prep is done.
  2. Reserve celery leaves, and chop cabbage & celery into approximately 1cm squares / chunks and add.
  3. Pare & chop carrots, onions, green peppers, and add.
  4. Add salt & black pepper and enough water to cover vegetables and bring to the boil on high heat.
  5. Simmer about 2 hours until vegetables are tender
  6. Add the celery leaves at the end.
  7. Ladle into bowl and garnish
