Tuma's Molasses Porridge Bread

Ingredients
- 1 cup warm water
- 1 teaspoon sugar
- 1 tablespoon yeast
- 3/4 cup Molasses
- 1 cup rolled oats
- 2 tablespoon butter
- 2 teaspoon salt
- 1 cup boiling water
- 1 cup cold water
- 3 cups whole wheat flour
- 3.5 cups all purpose flour
Method
- dissolve sugar in warm water, sprinkle yeast and proof for 5-10 minutes
- mix molasses, rolled oats, butter and salt. Add 1 cup boiling water, stir and then add 1 cup cold water
- add yeast mixture
- add flour bit at a time and mix until thoroughly mixed in.
- Start kneading on a floured surface.
- Let rise in a warm spot until it doubles in size or at least 1 hour.
- punch down and shape into two large loaves.
- Put into loaf pans, snip with scissors 2 or 3 cuts across the top and let rise for a bit.
- Put into preheated hot oven at 400 for 15 minutes, turn heat down to 325 for 35-45 minutes.
- let cool and brush with some melted butter.
