Tuna Egg Salad by Norval Collins
Makes lunch for four.
Equipment
- Large pot for boiling eggs & pasta
Ingredients
- 6 eggs, hardboiled
- 2 c medium size pasta shapes, rotini, fusilli, scoobi doo, etc.
- 2 tins of tuna
- 1/2 c mayo
- 1 tbl celery seed OR 1/4 c chopped fresh lovage OR 1/4 c celery leaf.
- 3 polski orgoki pickles (or bread'n'butter, or dill, or your favourite), chopped
- 2 tbl of the pickle juice
- salt & pepper to taste
Method
- You can boil the eggs and cook the pasta at the same time in the same water
- Drain pasta & cool, cool & shell the eggs
- Flake tuna into pot, add mayo, celery / lovage, pickles, pickle juice
- Mix pot ingredients, salt & pepper to taste
- Slice eggs over top, garnish with more lovage
