Tuna - Egg Salad

Tuna Egg Salad by Norval Collins

Makes lunch for four.

Equipment

• Large pot for boiling eggs & pasta

Ingredients

• 6 eggs, hardboiled
• 2 c medium size pasta shapes, rotini, fusilli, scoobi doo, etc.
• 2 tins of tuna
• 1/2 c mayo
• 1 tbl celery seed OR 1/4 c chopped fresh lovage OR 1/4 c celery leaf.
• 3 polski orgoki pickles (or bread'n'butter, or dill, or your favourite), chopped
• 2 tbl of the pickle juice
• salt & pepper to taste

Method

• You can boil the eggs and cook the pasta at the same time in the same water
• Drain pasta & cool, cool & shell the eggs
• Flake tuna into pot, add mayo, celery / lovage, pickles, pickle juice
• Mix pot ingredients, salt & pepper to taste
• Slice eggs over top, garnish with more lovage
